Servings: 4

1 Tbsp olive oil
1 cup frozen (thawed) chopped onion (or one large onion, chopped)
1 pint cherry tomatoes
1 teaspoon Italian seasoning
3 cups spinach leaves
1 cup fat free ricotta
3 eggs
6 egg whites
1/8 teaspoon salt
1/8 teaspoon pepper

Heat oven to 375. Heat oil in a large non-stick frying pan and cook the onion for 3 minutes.  Add the tomatoes and toss for 2-3 min to soften.

Remove from the heat, add the spinach leaves and toss together to wilt a little. Transfer all the ingredients to a  8 x 11" rectangular baking pan
that has been sprayed with non-stick cooking spray. Take small scoops of the ricotta and dot over the vegetables.

Season the eggs and egg whites with salt and pepper, then beat well. Pour over the vegetables and cheese. Cook in the oven for 20-25 mins
until pale golden and set. Serve with salad.
Picky Eater/Non-Dieter Tips:    If you have been doing the meal plan for awhile, you probably have a small individual ramekin for each of your
picky eaters.  If not, I would highly recommend purchasing a couple.  They are quite inexpensive at Wal-Mart and save you infinite time and
hassle.  For instance, tonight you could simply beat a few eggs, season with salt pepper, and add to a ramekin that has been sprayed with non
stick cooking spray.   Dice a Laughing Cow Light wedge and sprinkle over the top of the eggs.  Their ramekin can bake alongside the casserole.

Cooking Tips: When adding the spinach, be sure to remove from the heat and saute for just 30 seconds or so.  You're just trying to every
so slightly wilt the spinach and basil.  It is also critically important that you spray the baking dish with non-stick cooking spray before adding
the vegetables.  This recipe will stick to the pan if you don't.
