4 (4 ounce) boneless skinless chicken breasts
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 Tablespoons extra virgin olive oil
2 cups chopped fresh tomatoes (or 2 (15 oz) cans diced tomatoes)
1 Tablespoon minced fresh garlic
2 Tablespoons light butter
1/2 cup fresh basil, chopped
6 ounces Barilla Plus linguine
Heat water in large pot for pasta. Wait for water to boil and add pasta. If necessary, cut chicken breasts into 4 ounce
Once pasta is in water, season chicken breasts with kosher salt and fresh cracked black pepper. Add olive oil to your
skillet. When the oil is HOT, add the chicken breasts. Cook chicken breasts 3 minutes on first side and flip.. Cook second
side for 2-3 minutes or until cooked through. Remove to plate and tent with foil to keep warm. To same skillet add the
chopped fresh tomatoes, butter, salt and pepper. Saute for 1 minute. If pasta is not ready to be plated, turn heat to low to
keep sauce warm.
When pasta is cooked to al dente, drain in colander. Cut chicken into slices on the bias. Stir basil into tomato sauce. Divide
the pasta among 4 individual bowls, and top each with a sliced chicken breast, and equal portions of the tomato basil
Picky Eater/Non-Dieter Tips: Most picky eaters will go for this. But punt position is to serve their chicken breast
plain with buttered pasta on the side.

Cooking Tips: This is a fairly fool-proof dish if you follow the instructions. Timing is key. Have the chicken cut into
portions and tomatoes, basil and garlic ready to go before putting pasta in water, but don't start cooking the chicken
and the sauce until the pasta is cooking. And add the basil to the sauce just before serving. You want it to just
barely wilt, not cook down.
