Double Duty/Plan Ahead: Use planned leftover chicken from Slow Cooker Chicken and Potatoes.
These delicious tacos are quicker and healthier than running to Taco Bell.
Serves: 6 (2 tacos)
12 corn tortillas
16 ounces planned leftover chicken from Slow Cooker Chicken and Potatoes
3 teaspoons reduced sodium taco seasoning mix
2/3 cup diced vine ripe tomatoes
1/3 cup sliced green onion
2 cups bagged spinach or julienned romaine lettuce
1/3 cup fat free salsa
1/3 cup non-fat plain greek yogurt
1 Tablespoon lime juice
Wrap tortillas in a slightly damp paper towel. Heat on high for 20 seconds. Remove from microwave and take off paper towel. Set aside.
Dice cooked chicken into bite-sized pieces. Put chicken in microwave-safe bowl and sprinkle with taco seasoning. Toss to evenly cover. Cover bowl
with plastic wrap and microwave on high for 1 minute. Stack spinach leaves, roll up tightly, then slice into ribbons.
In small bowl, mix together yogurt, lime juice and salsa. Spoon chicken mixture evenly onto tortillas; top each taco with spinach or lettuce ribbons,
diced tomato, 1 Tablespoon salsa, 1 Tablespoon cheese and 2 teaspoons yogurt. Fold up tortillas taco style. Serve immediately.
Have your sides for this meal ready since these are best hot.. Non-dieters will probably eat two of these.
Picky Eater Tips:
You can always re-heat their chicken without taco seasoning. Put out the toppings and let everyone build their own. Serve salad on the side
for kids that prefer their chicken tacos plain. Consider omitting the onions. If so, provide raw finely diced onion for adults. Serve hot sauce
or extra salsa.
